I can’t get enough onion rings.  They might actually be the perfect food. These are fried in a fairly light batter that doesn’t compete with the spirals of sweet yellow onion.  Be careful when frying these.  The oil needs to be at 375 degrees when you slip the onion rings in it.  You need a good thermometer for this: https://amzn.to/3DAqfGz  Because oil at 375 degrees is pretty hot, y’all.  It only takes a few seconds for the oil to get to 400 degrees and then you’ve got a fire hazard on your hands.  In fact — and don’t tell my mother — when I made these last night, the thermometer on the side of my Dutch oven caught on fire.  Luckily, I was vigilantly watching the oil and saw the conflagration immediately.  I had a canned fire extinguisher under the sink that came to my rescue.  One spray and the flames that were ‘almost’ licking my oven hood were extinguished.  I highly recommend you have one of these cans in your kitchen and also close to your outdoor grills.https://amzn.to/3QeUH0j

    Directions

    Step 1

    Peel the onions and cut them in thick rings.

    Step 2

    Soak the onion rings in milk for about an hour.

    Step 3

    Make the batter. Combine dry ingredients and whisk in the milk until you get a cohesive but lumpy batter. Be sure you whisk in the milk just before you dip the onions in the batter.

    Step 4

    Heat the oil to 375 degrees.

    Step 5

    Dip the onion rings in the batter and then slide them into the hot oil. Be careful. Don't crowd the onion rings; otherwise, they will stick together.

    Step 6

    Fry until golden brown. Let the onion rings drain on paper towels and salt to taste.
